Poppin’ Up in 2023 with Phattbaq at Serious Pie

We’re only a few days into the New Year and the pop-up scene is showing serious promise. 

For the past three years Maisie Stewart-Cook, 21 years old, has been cooking around town, most recently on the line at Serious Pie. But there’s more to their story than that.

When they are not at the Tom Douglas pizza joint, Stewart-Cook is cooking for family and friends and authoring the food blog, phattbaq, all while gearing up for their pop-up this month at Serious Pie.

Growing up in a multicultural household, Stewart-Cook was influenced early on by the cooking of their their Filipina grandmother. So it only makes sense that their first pop-up menu is a tribute to those dishes that first got them to love food and into the kitchen.

On January 20 at 6:00 pm Phattbaq and Tom Douglas Restaurants open up the doors at Serious Pie for a serious pop-up.

Cucumber Salad – pickled cucumber and red radish
Squid Ceviche – squid, citrus, scallion, red chili, cilantro
Oxtail Soup – oxtail, ginger, onion, patis, spice & herbs
Grandma’s Chicken Adobo – wood-fire braised chicken thigh, rice
Carioca – deep fried sticky rice balls, calamansi

Special no abv and boozy drinks are also available for purchase and include; 

Green Light (a nod to the John Legend song featuring Andre 3000) – pandan, lychee, lime
Ailina St. (a nod to their grandmother’s street) – Spiced rum, mango, calamansi, lime

The pop-up is being described as a “celebration of community and connection, highlighting the importance of taking care of those who take care of you.” Tickets for the pop-up are $40 with proceeds going to International Community Health Services (ICHS) and Asian Counseling and Referral Services (ACRS) – which provide wellness services to the API community. 

Expect high energy and a playlist that’ll feature some of Maisie’s favorites including Seattle-based recording artist Blake Anthony, and some of their grandma’s favorite artists, including UB40.
