Pop-Up Alert: Ba Sa Lands in Seattle for Two Nights at Phocific Standard Time
If you haven’t made it to Bainbridge Island to check out Ba Sa, the buzzy Vietnamese spot from the Nguyen family, you can no longer use the ferry schedule as an excuse.
Ba Sa will be packing up the fish sauce, lemongrass, chili oil, shrimp, pork, and chicken for a trek across Elliott Bay. Once they pull up to Colman dock on March 31, they’ll head to Phocific Standard Time (PST), the moody cocktail bar that is perched atop the downtown location of Pho Bac.
The pairing makes perfect sense for several reasons. PST owners Yenvy and Quynh Pham are known for their late night cocktails that feature Vietnamese ingredients and flavors. Trinh Nguyen, the chef/owner of Ba Sa, is the second generation of the Nguyen family (proprietors of Pho T&N in Poulsbo) where she’s infused a little bit of the Pacific Northwest into their family’s traditional Vietnamese offerings.
Plus, the Phams and Nguyen just happen to be friends.
“We’ve all been friends for a long time,” said Trinh Nguyen in a release. “We’re super excited to collaborate and pair our food with the outstanding cocktails at PST. Plus, we never get to hangout on weekends. It’s a win, win for everyone!”
The Ba Sa at PST pop-up takes place Friday, March 31 and Saturday, April 1 from 5pm – 12am. It’s a walk-in type of an affair and the intimate speakeasy style bar is sure to fill quickly, so plan accordingly.
The Food
Grilled Corn Ribs with fish sauce, confit onion, and butter – $13
Taro Egg Rolls with pork, shrimp, onion, and wood ear mushroom – $8
Spicy Truffle Wonton with grilled shrimp, steamed pork and shrimp wonton, truffle oil, scallion, sesame seeds, chili oil, and ginger – $19
Venison Skewer lemongrass, fish sauce, and honey – $14
Chicken Sando with fried chicken and ghost buffalo sauce – $15
Mustard Greens with yuzu vinaigrette – $15
The Drinks
Dua Dùa made with Batavia Arrack rum, chareau aloe, soju, absinthe, coconut milk, lime and basil seed
Lá Dúa made with mezcal, reposado, pandan cordial, and candied hibiscus flower
Dâu Hū made with tofu infused gin, sesame oil washed rice wine, ginger, and msg.
In addition to their full menu of cocktails, PST will feature a special Em oi Cocktail – you’ll have to show up to find out what’s in this one!
