If you were in Seattle in 2005, you’ll likely recall the buzz around Chef Jason Wilson and his newly opened restaurant, Crush. In fact, Crush not only caught the attention of Seattleites, the national scene took notice as well. 

Shortly after opening, Food and Wine gave Wilson a “Best New Chef” nod. And, several years later, Wilson took home a James Beard award for “Best Chef: Northwest.” 

Crush closed in 2015, but the buzz around Wilson has continued.

In addition to opening Miller’s Guild in the Hotel Max in 2013, Wilson most recently opened the The Lakehouse in Bellevue. 

Now, Wilson will highlight his take on Pacific Northwest’s regional food in a restored seminary-turned-hotel.

Scheduled to open in May, Wilson will head up all culinary efforts as Executive Chef at the Lodge at St. Edward State Park

The lodge, located in Kenmore, WA, will have a main restaurant and two hotel bars within the complex. 

True to form, Wilson will focus on ingredients that are influenced by the surroundings of the Pacific Northwest. He’ll also get an assist from the Lodge’s on-site garden and apiary. Local seafoods will also be a menu staple when in season.

The restaurant, Cedar + Elm, promises a light-filled experience with an open-format kitchen and lounge with indoor and outdoor seating. Just off the restaurant, Father Mulligan’s Heritage Bar will be a popular spot for those looking for creature comforts like wood-fired flatbreads and pizzas.

On the lower level of the hotel, guests and visitors will be able to tuck into The Tonsorium Bar for light bites and a playful cocktail.

A national landmark, the Lodge was built in 1931 and has been restored into a new 84-guestroom hotel. It is located in Washington’s second most-visited state park.

With Wilson at the helm in the kitchen, perhaps that will change to the most visited.
