Tacolate Time: Ice Cream Meets Taco Bell at Salt & Straw

Salt & Straw is serving up a sweet surprise this fall with the debut of The Tacolate, a playful collaboration with Taco Bell that lands in shops Friday, October 3. Just in time for cozy season, the Portland-based ice cream maker is rolling out the nostalgic treat at all locations, including its brand-new scoop shop in Queen Anne.

The Tacolate is exactly what it sounds like, but with the inventive spin fans have come to expect from Salt & Straw. Imagine a hand-pressed waffle cone folded into the shape of a taco shell. Now fill it with cinnamon ancho chili ice cream, dip it in single-origin chocolate, and sprinkle it with toasted brown rice for an extra crunch. Each one comes with two sauce packets inspired by Taco Bell: a tangy Mango Jalapeño and a sweet-tart Wildberry Cinnamon. It is equal parts dessert and throwback to everyone’s favorite childhood ice cream truck order.

This treat has been years in the making. Salt & Straw first tested an ice cream taco back in 2016 at their experimental shop, Wiz Bang Bar. When they brought it back in 2022, the run sold out almost instantly, sparking buzz across social media. That success caught Taco Bell’s attention, and together the two brands have now turned the idea into a full-scale release.

For Seattle, the timing couldn’t be better. The Queen Anne location opened earlier this month, giving fans another place to grab creative flavors like Arbequina Olive Oil and Honey Lavender alongside the new Tacolate. 

The Tacolate will be available at Salt & Straw shops nationwide and through shipping on saltandstraw.com starting Friday.
