Hitchcock Rolls Out International Street Food Pop-Up

Hitchcock rolls out first come, first served international street food pop-up.

Hitchcock has never been afraid to mix things up. Most recently, this Bainbridge Island darling switched gears with its self-proclaimed burger joint, Burgerhaus. Granted, that “burger joint” serves up 21 day dry-aged grass-fed beef sourced from Washington with bacon cured in-house.

And, as the pandemic continues to have us revisiting the benefits of al fresco dining, Hitchcock answered the clarion call. With its very own outdoor biergarten, Hitchcock brings neighbors together over boozy shakes and cocktails.

Now, Hitchcock chef and owner Brendan McGill, brings together an impressive list of guest chefs for another source of comfort. Over the next couple of months, Hitchcock is hosting an international street food pop-up with chefs from across the globe.

Chefs with influences from the Philippines, Puerto Rico, Cuba, Turkey, and Peru will offer up street food with a nod to their birthplace.

The international street food pop-up kicks off this weekend with Puerto Rican Chef Alejandro Tress. Chef Alejandro has spent time as a Chef De Partie at Le Bernardin and is the chef and owner of Magna in Portland. 

In two weeks, Chef Carlo Lamagna will bring his influences to the international street pop-up. Born in the Philippines, Chef Carlo Lamagna is chef and owner of Magna Kusina in Portland. Prior to Magna, Lamagna ran the kitchen at Portland’s Clyde Common.

Chef Osmel Gonzales, a sous chef at the three Michelin star restaurant, SingleThread in Healdsburg, California follows in February with his take on Cuban street food. Gonzales also worked for Disfrutar, one of the most heralded restaurants in Europe .

The first weekend in March is set aside for Chef Berk Guldal, another sous chef that spent time at SingleThread. Guldal also spent time at the celebrated Café Boulud and Eleven Madison Park in New York. He currently provides private fine dining experiences.

Two weeks later, Chef Stefano Schiaffino will provide his take on Peruvian street food. Schiaffino has worked at the three Michelin star Eleven Madison Park and Element 47 at The Little Nell in Aspen, Colorado.

The pop-ups run every other weekend and are first come, first served (see dates and time below). So, if you don’t live on the Island, reserve those ferry tickets now.

Some menu offerings will include:
Alcapurrias – Dungeness crab and pumpkin fritters with cardamom-achiote aioli
Empanadillas – Shady Acres Mangalitsa pork empanadillas with local kiwi salsa verde
Charred Giant Pacific Octopus Salad – Chilled salad with brown butter-pineapple sauce
Mofongo – Traditional mashed plantains with spot prawns, chicharrones, and sofrito sauce
Mamposteao – Traditional crispy rice and beans with mojo chicken and pickled onions

February 5th, 6th & 7th: 11:30 – 7:00

Filipino-inspired menu items to include:
Longipan – Longanisa on a pandesal roll with grilled cilantro relish
Arroz Caldo – Chicken and rice porridge with chicken skin chicharrons, fried garlic, scallions, and calamansi
Crab Fat Noodles – Dungeness crab, crab fat sauce, squid ink noodles, pickled corn chow chow
Ginataang Kalabasa – fire roasted kabocha squash, spicy coconut broth, roasted pumpkin seeds, bitter greens
Inihaw na baboy – grilled pork chop marinated in soy sauce and calamansi, served with rice and atcharra

February 19th, 20th & 21st: 11:30-7:00

Cuban-inspired menu items to include:
El Cubano – Classic cuban sandwich
El Lechon – Roasted pork sandwich 
La Frita de Chorizo – Gourmet Chorizo burger
Masa Frita – Rice and black bean bowl top with red and white onion and cilantro, topped with fried pork.
The Mad Yuca – Yuca fries with spicy aioli and fried egg

March 5th, 6th and 7th 11:30-7:00

Chef Berk Guldal

Turkish-inspired menu offerings will include:
Köfte- Turkish style beef meatballs
Çoban Salatası- Shepherd salad, with pomegranate molasses
Adana Kebab – Traditional lamb kebab from the city of Adana
Fresh Piña Coladas with Puerto Rican rum

March 19th, 20th, 21st – 11:30 – 7:00

Peruvian-inspired dishes include:
Ceviche
Tiradito
Lomo saltado
